Curious about what makes brick oven cooking so magical? Join us for a fun, hands-on 3-hour class where you’ll explore the history, flavors, and techniques of cooking in a real brick oven!

We’ll start with a lighthearted dive into the story of brick ovens—from ancient hearths to the ones you see today—so you’ll know why they give food that irresistible flavor.

Then it’s time to cook! Chef David Binkle will guide you as we prepare a variety of proteins—beef, chicken, pork, and seafood—along with fresh seasonal vegetables, all roasted to perfection in the brick oven. You’ll get to help with prep, seasoning, and plating, learning tips along the way while having a great time.

By the end, you’ll walk away with new skills, delicious bites to savor, and the confidence to recreate these tasty dishes at home—all in a relaxed, fun atmosphere.

Meet The Instructor

Chef Dave Binkle

Chef Dave Binkle is a distinguished culinary professional with a robust career in large-volume dining and institutional food services. His experience includes roles with Morrison Custom Management, overseeing food services for major healthcare facilities and student nutrition programs, including Fresno State University and Los Angeles Unified School District. He recently served as Executive Chef Corporate R&D for Food Service Partners.

Binkle holds multiple certifications: Certified Executive Chef (CEC), Certified Executive Pastry Chef (CEPC), Certified Culinary Administrator (CCA), and Foodservice Management Professional (FMP). His work has been featured on CNN, CBS, NBC, and ABC, and in PBS’s Food Forward and Jamie Oliver’s Food Revolution. He has lectured at The Culinary Institute of America, Harvard University, and has received numerous accolades, including Chef of the Year in Los Angeles, the ACF President’s Medal, and induction into the Les Amis d’ Escoffier Society. He also holds a Master’s Degree in Public Administration from California State University Northridge and is a lifetime Rotary Club International Paul Harris Fellow.
