Friday, February 17, 2023 – Detroit Style Pizza– Learn the secrets to making the best Detroit-style pizza. This rectangular deep-dish pizza is known for its thick crispy and chewy crust. It is traditionally topped with cheese and Wisconsin brick cheese on its edges, then tomato sauce layered on top of the other toppings (rather than directly onto the dough). You will learn about the differences between Detroit and Chicago-style pizza. You will also learn about the key tools to help the home chef recreate this style in their home ovens and how to identify quality Detroit-style pizza when ordering it from a restaurant.

Friday, March 3, 2023 – Neapolitan Style Pizza-Learn the secrets to making the best Neapolitan pizza. It can be challenging for a home chef to consistently create a moist and soft crust texture without overcooking it. The goal is a light and crispy crust that is full of air bubbles. Learn how to make this golden-brown crust with its typical brown spots given by the high baking temperature. You will also learn how to adjust your sauce and toppings for the ideal finish.

Friday, March 17, 2023 – New York Style Pizza-Learn the secrets to making the best New York Style pizza at home. They are traditionally made with a characteristically large hand-tossed thin crust. The crust is thick and crisp only along its edge, yet soft, thin, and pliable enough beneath its toppings to be folded in half to eat. Students will learn about how to balance the toppings and sauce on these pizzas at home to perfection. The goal is to be able to produce a consistent product at home every time.
