Operating a pizzeria is challenging; working the long hours, finding skilled staff, keeping the skilled staff, and ultimately delighting your customer with a great and consistent product takes time and energy. Working with frozen dough is an innovative and cost-efficient alternative to the traditional baking processes.
Food quality and consistency are top priorities for all pizza operations, especially those with several locations or large volumes to manage.
Using frozen dough is a valuable practice for keeping a kitchen running efficiently, profitably, and predictably.
Through our 3-day culinary course, our instructor will teach you about the different types of frozen products: Frozen Pizza Dough Balls, Par-Baked Pizza Shells, and Freezer to Oven Pizza, as well as yeast and fermentation solutions and applications. Controlling the fermentation and moisture is the key to achieve a perfect frozen product.
This class is composed of a theoretical and practical section.

Ralf is a native German with a passion for baking. He completed his baking apprenticeship in 1980 and earned a Master’s in baking in Stuttgart, Germany, in 1986. In 1987, Ralf opened a bakery for a large German company in Toronto, Canada. He then gained further baking and sales experience with three additional companies before joining Lesaffre in 2002. Ralf is currently the Baking Business Development Manager, which entails providing custom baking solutions to the baking and pizza industry. He is ecstatically, happily married, and has two beautiful daughters and the cutest grandsons to ever walk the Earth.
